It’s cold outside, so for dinner we needed something heavy.
I had chicken thighs and cut them into smaller pieces to mimic sausage. Seasoned with ground chili, red pepper flakes, rosemary, bay leaf, onion, garlic, and S&P, I cooked the chicken 3/4 of the way and then added broccoli. Lastly, I added a can (8 or 12 oz) of tomato sauce and simmered that while the pasta cooked.
The dish turned out just as spicy as I wanted and I was glad to have been able to make chicken taste like italian sausage. With plenty of parmesan on top and a glass of red wine, it was perfect.
