Well, I will try to commit to posting once a week. We’ve become busier, and unfortunately that has created many situations in which we must go out to eat. Here is what I thought might be a simple plain dish, but turned out rather delicious. Baked potatoes cubed and seasoned with olive oil, S&P, and rosemary. The peas and carrots were steamed. Steaming vegetables really opens up their flavor, so make sure you get some good (organic, even) veggies. I pan cooked the tilapia with a bit of Dijon mustard, worcheshire sauce, vinegar, olive oil, S&P, and lots of garlic.
