This is an embellished version of a dish my mother makes. She stuffs red tomatoes with ground beef, onion, S&P, Oyster sauce, and garlic. Served with white rice and nuoc mam.
I stuffed green tomatoes (for the firmness) with ground chicken thigh, dried red peppers (like meatballs), garlic, Oyster sauce (they have this at Central Market now), and S&P. Fried and serve with white rice and nuoc mam.
In the future, I would fry then pop them into the oven to finish it off. To ensure cooked chicken, I had to quarter them. Shame on me. I’ve been brained washed by health code law.
Nuoc mam is a sauce/dressing in most every Vietnamese dish. It entails fish sauce, garlic, lime, sugar, and red chili pepper. A good wife can get all of that to float on the top of the bowl.
Nuoc mam with anything is my version of white gravy on chicken fried steak.
